Crimson Resort & Spa Mactan partners with the famed Chef Chele Gonzalez for its newly opened Spanish restaurant, Enye by Chele Gonzalez. The name Inspired by the Spanish letter Ñ, which is also part of the Filipino alphabet, signifying the lasting influence to our culture.
Enye’s menu too feels familiar and close to our heart, attributed to the fact that Spanish and Filipino food share a lot of history and commonality. Providing flavor profiles that are very familiar to the palate. Enye serves authentic and contemporary Spanish cuisine focused on the different diversities of food in Spain. The menu has both traditional and modern options based on Chele’s favorite tapas and comfort food. Traditional selection includes salpicon de Marisco whichs marinated seafood in pepper and onion vinaigrette, Rabo al Vinto Tinto a slow cooked oxtail in red wine and potatoes and a local favorite the paella. Modern selection has exciting dishes such as Carpaccio de Wagyu with parmesan ice cream and pine nuts and ensalada de jamon y foie.
